WILLIE'S CHILI

Amount Measure Ingredient -- Preparation Method

2 cups dried anasazi or kidney beans

2 bay leaves

1 cup water

1 cup TVP flakes -- granules or strips

1/4 cup olive oil

2 onions -- chopped

8 cloves garlic -- sliced

2 tsp. Cayenne Pepper

2 tsp. ground coriander

2 tsp. ground cumin

28 oz. canned crushed tomatoes

2 fresh Anaheim chili peppers -- chopped

Sea salt and pepper to taste

 

Rinse and soak beans in 8 cups water overnight. · Bring beans to a

boil with bay leaves, let simmer one hour. · Bring TVP and water to

boil, take off heat and let sit covered for five minutes. · Sauté

onions and garlic in olive oil until transparent and lightly browned.

· Add cumin, cayenne and coriander

 

Add reconstituted TVP and let simmer for five minutes so TVP can take

up flavor.

 

Add cooked beans, crushed tomatoes, Anaheim chilis, salt and pepper ·

Let simmer one more hour.

 

Adjust seasonings.
