Baked Marinated Tofu

8 ounces firm tofu -- aboout

1/4 cup soy sauce

2 tablespoons rice vinegar

1 garlic clove -- pressed

2 teaspoons ginger juice -- squeezed from about 2 tablespoons planed

or finely grated fresh ginger

 

Cut the tofu into 1/2-inch slices. Place the tofu in a shallow, glass or other

non-rreactive baking dish large enough to hold the slices in one layer.

 

Combine the soy sauce, vinegar, garlic, and ginger juice. Add 1/4 cup water.

Pour the marinade over the tofu. Set it aside to marinate for 30 minutes at

room temperature, or 1 hour in the refrigerator. Bake at 375F for 15 minutes.

Turn the slices. Bake for 10 minutes more. Let the tofu cool in the marinade.

This tofu will keep for up to 4 days, tightly covered and refrigerated.

NOTES : This flavorful tofu is decidedly milder than the one made with Spicy

Tofu Marinade. While its blend of ginger, garlic, and rice vinegar rings a

pleasantly familiar Asian note, its savory taste goes well not just in

stir-fries but also in grain and vegetable dishes. Double the recipe to make

one pound, if you like.
