When I got up this morning, I noticed that the minestrone soup I'd sent

yesterday came about 4 this morning, and while noticing that, another I posted

yesterday - Lion's Head Soup - showed up! I realize my ISP is lousy, but a 24

hr delay!

Mushroom and Miso " Cappuccino "

Amount Measure Ingredient -- Preparation Method

1 1/2 cups chopped onions

1 large garlic clove -- sliced

4 ounces white mushrooms -- stemmed and sliced

2 ounces fresh shiitake mushrooms -- stemmed and sliced

1 teaspoon dried oregano

2 tablespoons barley miso

 

Combine the onions, garlic, white mushrooms, and shiitakes in a large saucepan

and add 4 cups water. Cover and bring to a boil. Reduce the heat and simmer

for 20 minutes. Uncover and let the soup sit for 10 miinutes.

 

Add the oregano. Puree the soup in te pot with an immersion blender, or

transfer the soup to a blender and puree. Return the soup to the saucepan.

 

Cream the miso with 2 to 3 tablespoons of the pureed soup in a small bowl, using

the back of a spoon. Add the dissolved miso to the soup and whisk to blend

thoroughly.

 

Serve immediately, or reheat and serve, taking care not to let the soup boil.
