Bean and Kale Scramble

Amount Measure Ingredient -- Preparation Method

1 teaspoon olive oil

1 large onion -- finely chopped

2 cups Great northern beans or white beans

- or 19 oz canned beans -- rinse and drained

1/4 cup chopped dill

5 cups chopped kale

1/3 cup freshly squeezed lemon juice

3 tablespoons water

2 tablespoons soy sauce

1 tablespoon prepared mustard

 

Serves 4 to 6

 

Here's an interesting side dish that mixes dark greens and beans with

a savory lemon and dill flavor. It's a creative way to serve healthy

calcium-rich greens.

 

In a large nonstick skillet, heat oil over medium heat Add onion and

saute for 3 minutes. Add cooked beans and dill; saute another 3

minutes.

 

Add remaining ingredients and saute 5 minutes Stir occasionally.

Serve hot or cooled to room temperature.
