Guest guest Posted October 1, 2001 Report Share Posted October 1, 2001 * Exported from MasterCook * Minestrone Recipe By :Dana Jacobi Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra-virgin olive oil 1 medium onion -- chopped 1 carrot -- chopped 1 14 1/2 oz can vegetable broth plus 2 cups water, or 4 cups water 1/4 pound red-skinned new potatoess -- cut into 1 " pieces(about 1 cup) 1 cup canned plum tomatoes -- seeded, with their juice 1 cup frozen shelled edamame 1 medium zucchini -- chopped 1/2 cup green beans -- cut in 1 " pieces 3 large leaves Swiss Chard (green part only) -- cut crosswise in 1/2-inch strips 1/8 teaspoon red pepper flakes -- optional 1/2 cup ditalini, spaghetti broken into 1/2-inch lengths, or small shells salt and freshly ground black pepper Heat the olive oil in a medium Dutch oven over medium-high heat. Add the onion and carrot and saute until the onion is soft, 6 to 8 minutes. Pour in the vegetable broth, if using, and the water. Add the potatoes and bring the soup to a boil. Reduce the heat, and simmer until the potatoes are al dente,, 8 minutes. Add the tomatoes, edamame, zucchini, green beans, chard, and red pepper flakes, if using. Increase the heat to medium-high and stir in the pasta. When the soup returns to a simmer, cook until the pasta is done, about 15 minutes. Season to taste with salt and pepper and serve.
