Barley Mushroom Soup

Amount Measure Ingredient -- Preparation Method

1 cup onions -- chopped

1/2 cup carrot -- diced

1 cup celery -- thinly sliced

3 cups mushrooms -- sliced

5 cups water

4 teaspoons instant vegetable broth mix

1/2 cup barley -- uncooked

salt and pepper -- to taste

 

Serving Size: 8

 

In a large soup pot, combine all the ingredients. Bring to a boil. Cover,

reduce heat to low and simmer 1 hour.

 

Nutritional analysis: Calories 80, Fat 0, Cholesterol 0, Carbohydrate 14,

Protein 3, Sodium 335.
