Guest guest Posted October 1, 2001 Report Share Posted October 1, 2001 * Exported from MasterCook * Cauliflower and mushroom pasta Recipe By :From the book: Recipes for Entertaining Serving Size : 0 Preparation Time :0:00 Categories : Granma Vance Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 500 g spiral or penne pasta 1 tb olive oil 1 onion chopped 2 cloves garlic chopped 2 cups sliced mushrooms 2 tbs tomato paste 4 firm ripe tomatoes chopped ¼ cup white wine 1 head cauliflower cut into florets 2 tbs fresh parsley chopped freshly grated parmesan cheese Cook pasta according to direction on the packet. Heat oil in a large saucepan. Cook onion and garlic for about 3 minutes. Stir constantly to prevent sticking. Add mushrooms, tomato paste, wine and tomatoes. Cook over medium heat for 10 minutes. Add cauliflower. Cook a further 5 minutes or until liquid has reduced slightly and vegetables are tender. Stir in parsley. Toss sauce through cooked pasta.
