Butternut and sugar pea curry

750 g butternut pumpkin

 

1 tblsp vegetable oil

 

1 small onion finely diced

 

1 tblsp thai curry paste -- (1 to 2)

 

1 ½ cup vegetable stock or water

 

200 s sugar peas or snow peas

 

6 dried mushrooms soaked -- (6 to 8)

 

OR

 

125 g fresh mushrooms

 

300 g coconut milk

 

Peel the pumpkin, removing the seeds and fibre. Cut into chunky pieces. Heat oil

in a large frying pan, and saute onion until soft, about 2-3 minutes. Add the

curry paste, cook for 1 minute. Add the pumpkins and cook gently shaking the pan

every now and then.

 

Add the stock or water reduce heat and simmer until pumpkin is just tender. Add

the sugar peas, mushrooms and coconut milk and simmer until the sugar peas turn

bright green, but are still crisp. Serves 4 with steam rice.

 

Coconut milk and thai curry paste are available at delicatessens and

supermarkets. Add sugar pease near the end, so they stay fresh and green. Other

vegies may be cooked this way. This dish is easy, quick to prepare and

delicious.

NOTES : Granma Vance's notes: My daughter likes to use more Thai curry paste in

this than I do, just adjust to your taste.
