I just learned of a renowned vegetarian (vegan, I believe) restaurant

in the LA area called Native Foods. I think they also have a

restaurant in Palm Springs. The owner has a cookbook called The

Meat-Lovers Vegetarian Cookbook. Here are the recipes from the book

SWEET & SOUR TEMPEH

Amount Measure Ingredient -- Preparation Method

2 tempeh patties -- cooked

- according to " basic prep " method

- and cut in 1/2 inch cubes

1 red bell pepper -- sliced lengthwise

1 yellow bell pepper -- sliced lengthwise

1 carrot -- cut in match stick

slices

1 cup broccoli flowerettes

1 ear corn kernels

2 Tb. olive or sunflower oil

1 tsp. toasted sesame oil

1/2 cup green onion -- finely chopped for

garnish

1/2 cup cilantro -- chopped for garnish

toasted sesame seeds for garnish

 

Prepare sweet and sour sauce, set aside. - In saute pan or wok, heat

oils until hot then add red and yellow bell peppers and stir-fry for

one minute.

 

Then add broccoli, carrot and corn kernels. - Stir fry until veggies

are slightly cooked. - Pour in sauce and tempeh cubes.

 

Serve over rice or noodles.

 

Garnish with fresh cilantro, green onions, and toasted sesame seeds

Sweet and Sour Sauce

Amount Measure Ingredient -- Preparation Method

1 cup apple juice

1/3 cup soy sauce

2/3 cup water

1/3 cup maple syrup

1 tablespoon miso

1 tablespoon whole grain mustard

1/3 cup rice vinegar

2 slices ginger -- pressed or grated

-(2 to 3)

3 tablespoons kuzu

 

Dissolve miso in water

 

Put all ingredients in saucepan except one half cup of apple juice

and the kuzu Place over high heat.

 

Dissolve the kuzu in remaining apple juice. - Add to saucepan,

stirring until mixture thickens and comes to boil (2-3 min.)

 

Remove from flame.
