Guest guest Posted October 1, 2001 Report Share Posted October 1, 2001 * Exported from MasterCook Mac * Almond Rice Pudding Recipe By : VEGAN MEALS FOR ONE OR TWO, Chef Nancy Berkoff Serving Size : 3 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup uncooked white and brown rice 1 cup water 2 cups almond milk -- * 1/4 cup maple syrup 1/2 teaspoon vanilla extract 1 teaspoon cinnamon 1/4 cup raisins - or dried cranberries - or dried blueberries Here's a great way to include rice and fruit in your meal. * (you can substitute plain or vanilla soy or rice milk with 1 tablespoon almond extract) In a medium-sized saucepan, combine rice and water. Bring to a fast boil, cover, and reduce heat. Simmer for 15 minutes or until all the water is absorbed. Stir in almond milk and maple syrup, stirring, until the rice mixture is as thick as soupy cooked cereal (this should take approximately 30 minutes). Remove from heat and stir in cinnamon and raisin or other dried fruit. Eat warm or refrigerate until you're ready to eat. Note: Pudding, if overcooked, will become dry instead of creamy.
