Spinach Raita

1 (8-oz) bunch spinach -- trimmed

3/4 cup plain lowfat yogurt

1 teaspoon lemon juice

1/2 teaspoon ground cumin

1/2 teaspoon powdered sugar -- or to taste

 

Boil, steam or microwave spinach until just wilted; drain, squeeze out excess

liquid. Process spinach with remaining ingredients until smooth.

 

TIP - I would gently warm the cumin in a dry nonstick pan before using. - pat
