Well, we wished it were a little colder, but both of us agreed that tomato

soup and grilled cheese sandwiches were what we needed tonight. Instead of

opening the can for the soup, I tried this recipe. It turned out very well,

and even though it's not Campbell's it's very good. I added some extra

molasses (I like to add molasses to tomato based stuff) and used Neufatchel

(however it's spelled) cheese instead of the full fat. I also forgot to add

the mustard to our grilled cheese sandwiches, no matter...it was still

wonderful! This recipe actually has 3 variations, a really rich one, this

less rich one, and one that is fat-free.

Cream of Tomato Soup - Variation II (The Enchanted Broccoli Forest)

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 1/2 cups chopped onion

2 large cloves garlic -- minced

1/2 teaspoon salt

1/2 teaspoon rosemary

1 teaspoon dried basil

freshly ground black pepper

28 ounces tomatoes -- pureed (2 lbs fresh)

3 tablespoons dry sherry

1 teaspoon honey

4 ounces cream cheese

minced fresh parsley

 

Heat the oil in a soup pot or Dutch oven. Add onion, garlic, salt, herbs,

and black pepper, and cook over medium heat until the onion is soft (10

mins).

 

Add the tomatoes, sherry, and honey. Cover and simmer about 15 minutes.

 

Cut the cream cheese into the hot soup. Continue cooking, and stir until

smooth. (The cream cheese will take a little while to melt thoroughly).

 

Serve hot, topped with freshly minced parsley.
