Guest guest Posted September 28, 2001 Report Share Posted September 28, 2001 to try - Long tagliatelle tossed with sweet-sour caramelized onion and raisins; topped with wilted garlicky spinach and beans, garnish with more of the onions. * Exported from MasterCook * Pasta with Caramelized Onions and Green Beans Recipe By :Cole's Home Library Mini-Menus Cookbooks: Healthy Eating Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Caramelized Onion Mixture: 4 tablespoons butter 3 medium red onion -- sliced 1/4 cup water 1/3 cup firmly packed brown sugar 1/2 cup malt vinegar 1/4 cup raisins Pasta Mixture: 1 pound tagliatelle pasta 10 ounces green beans -- halved 1 1/2 tablespoons olive oil 2 garlic cloves -- crushed 1 8-oz bunch spinach -- cleaned, shredded Heat butter in pan, add onions and water; cook, covered, over low heat about 15 minutes, stirring occasionally, or until onions are soft. Add sugar, vinegar and raisins; cook, covered for 15 minutes. Meanwhile, add pasta to large pan of boiling water; boil, uncovered, until just tender, drain. Boil, steam or microwave beans until just tender; drain. Combine pasta and HALF the onion mixture in bowl; mix well. Heat oil in pan, add garlic, spinach and beans; cook, stirring, until spinach is just wilted and beans are heated through. Serve pasta mixture topped with spinach mixture and remaining onion mixture. Serves 4 to 6. Tagliatelle is a very long flat pasta. Substitute fettucine or linguine for shape; any pasta for flavor. Recipe appears in the Pasta volume of the mini-menu series.
