Pasta with Caramelized Onions and Green Beans

Caramelized Onion Mixture:

4 tablespoons butter

3 medium red onion -- sliced

1/4 cup water

1/3 cup firmly packed brown sugar

1/2 cup malt vinegar

1/4 cup raisins

Pasta Mixture:

1 pound tagliatelle pasta

10 ounces green beans -- halved

1 1/2 tablespoons olive oil

2 garlic cloves -- crushed

1 8-oz bunch spinach -- cleaned, shredded

 

Heat butter in pan, add onions and water; cook, covered, over low heat about 15

minutes, stirring occasionally, or until onions are soft. Add sugar, vinegar and

raisins; cook, covered for 15 minutes.

 

Meanwhile, add pasta to large pan of boiling water; boil, uncovered, until just

tender, drain.

 

Boil, steam or microwave beans until just tender; drain.

 

Combine pasta and HALF the onion mixture in bowl; mix well.

 

Heat oil in pan, add garlic, spinach and beans; cook, stirring, until spinach is

just wilted and beans are heated through.

 

Serve pasta mixture topped with spinach mixture and remaining onion mixture.

Serves 4 to 6.

 

Tagliatelle is a very long flat pasta. Substitute fettucine or linguine for

shape; any pasta for flavor.
