I am putting some into bags and into the freezer. Brenda Adams * Exported from MasterCook * Morning Glory Muffins Recipe By :Taste of Home, April/May 2000 Serving Size : 21 Preparation Time :0:00 Categories : Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat flour 3/4 cup sugar 1/2 cup oat bran 1/2 cup all-purpose flour 2 teaspoons baking soda 1/2 teaspoon salt 3 eggs 3/4 cup applesauce 1/4 cup vegetable oil 1/4 cup molasses 2 teaspoons vanilla extract 1/4 teaspoon orange extract 2 cups grated carrots 1/2 cup raisins 1/2 cup walnuts 1/2 cup coconut flakes -- (flaked coconut) 1 medium tart apple -- peeled and finely chopped In a [large] bowl, combine the dry ingredients. In another bowl, combine eggs, applesauce, oil, molasses and extracts; mix well. Stir into the dry ingredients just until moistened. Fold in carrots, raisins, walnuts, coconut and apple. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350°F for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Review by Brenda Adams 9/26/01 <badams007: I made a batch of these yesterday and another batch today...trying to keep up with my husband who keeps eating them up. These are full of good for you stuff and they are moist and tasty. (Applesauce: I used a can -- 15 ounces -- that one can made both batches of muffins exactly. 3/4c + 3/4 c.) Yield is supposed to be 18 muffins, but both times I made them, I got 21 muffins.
