Guest guest Posted September 28, 2001 Report Share Posted September 28, 2001 * Exported from MasterCook * Steamed Carrots Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 350 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds carrots -- scrubbed or peeled 2 tablespoons butter or olive oil -- to taste Salt and freshly milled pepper 1 tablespoon minced parsley 2 teaspoons lemon thyme OR regular thyme or chervil or dill OR mint -- or lovage Serves 4 A basic preparation for carrots that will be seasoned later. Add salt, a few sprigs of a favorite herb, and a sliver of onion to the steaming water if you like. Leave small carrots whole; cut large carrots into rounds, ovals, matchsticks, or whatever shape you want. Make sure all the pieces are about the same size to ensure even cooking. Steam them, covered, over boiling water until they just yield to the tip of a knife, 5 to 12 minutes, depending on their size. Turn them into a bowl, add the butter or oil, season with salt and pepper and toss until the butter is melted.
