Guest guest Posted September 27, 2001 Report Share Posted September 27, 2001 another variation -- this one from the healthy eating cookbook serves 2 to 4 main/side * Exported from MasterCook * Tomato Basil Fettuccini (Healthy) Recipe By :Accent Health Network http://www.accenthealth.com/recipes/ Serving Size : 2 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ounces fettuccine 1 tablespoon olive oil 4 tomatoes -- diced 2 cloves garlic -- minced 2 teaspoons fresh basil -- chopped (or 1/2 teaspoon dried basil) 1 pinch granulated sugar 1/4 cup fresh parsley -- chopped salt and freshly ground pepper to taste 2 tablespoons parmesan cheese -- grated Cook the fettuccine in a large pan of boiling salted water, al dente. Heat the oil in a heavy skillet over medium heat. Add the tomatoes, garlic, basil, and sugar and cook for 5 minutes, stirring occasionally. Add the parsley, salt, and pepper. Add tomato mixture and cheese to the noodles, tossing to mix.
