Guest guest Posted September 27, 2001 Report Share Posted September 27, 2001 * Exported from MasterCook * Red Cabbage With Apples Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 347 Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons sunflower seed oil 1 small onion -- finely diced 1 tablespoon caraway seeds 1 medium red cabbage -- about 2 pounds, quartered and cored and finely sliced 2 Granny Smith or Pippin apples quartered and cored and diced Salt and freshly milled pepper Apple cider vinegar SERVES 4 TO 6 The combination of cabbage with apples and onions is classic. Vary it by adding boiled, whole chestnuts or toasted walnuts just before serving. Heat the oil in a large skillet. Add the onion and caraway, give them a stir, then cook for a few minutes over medium heat until the onion is translucent Add the cabbage and apples and season with 1 teaspoon salt. Cover tightly and cook very slowly until the cabbage is meltingly tender, up to an hour.
