Date Shake

Amount Measure Ingredient -- Preparation Method

1/2 cup chopped, pitted Medjool dates (4 to 6

dates)

1/2 cup boiling water

1 cup vanilla soy frozen dessert

1 cup unsweetened soy milk

1/4 teaspoon instant espresso coffee powder -- optional

4 ice cubes

 

Combine the dates and boiling water in a blender and puree.

 

Add the frozen dessert, soymilk, instant coffee, if using, and ice cubes. Whirl

until the ice is blended.

 

Pour into two tall glasses and serve immediately.

NOTES : Southern Californians have long enjoyed thick date shakes. Now, it is

time for the rest of us to discover this lotus-land milk shake, too, with this

dairy-free version. The secret to turning fiber-rich dates into a smooth shake

is to start with moist, soft Medjool dates and blend them with hot water before

adding the other ingredients. A touch of instant espresso powder adds an

interesting note.
