Guest guest Posted September 26, 2001 Report Share Posted September 26, 2001 * Exported from MasterCook * Broccoli Rabe With Garlic And Red Pepper Flakes Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 342 Serving Size : 3 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large broccoli rabe bunch (1 1/2 to 2 pounds) Salt 3 tablespoons extra virgin olive oil 3 garlic cloves -- sliced Several pinches red pepper flakes Lemon wedges or red wine vinegar Leaving the leaves and florets attached, peel the large stalks with a paring knife. Drop them into pot of boiling salted water and cook for 5 minutes, longer if you like your greens well cooked and tender, then drain. Leave it whole or coarsely chop. Heat the oil with the garlic and pepper flakes in a large skillet over medium-high heat until the garlic just begins to color. Ad the broccoli rabe and cook, turning it repeatedly so that it's coated with the oil, about 5 minutes. Taste for salt.
