Cannellini Bean Salad

Amount Measure Ingredient -- Preparation Method

15 ounces canned cannelini beans -- thoroughly rinsed

1 burpless cucumber -- seeded and finely ch

1/2 medium red bell pepper -- finely chopped

1 small red onion -- finely chopped

3 tablespoons lime juice

OPTIONS:

extra virgin olive oil

Cajun seasoning

 

Combine beans, cucumber and bell pepper. Add onion to taste. toss with fresh

lime juice.

 

Optional: splash with olive oil and dust with cajun seasoning (Pat's changes)

 

Serve as side dish or pita stuffing.
