Herbed Tofu & Vegetable Medley

Amount Measure Ingredient -- Preparation Method

1/2 small butternut squash -- peeled, seeded, and cubed

1 small zucchini squash -- unpeeled and cubed

1 medium-sized sweet potato -- peeled and cubed

1 large white potato -- peeled and cubed

1 large onion -- cut into wedges

1 small turnip -- peeled and cubed

2 carrots -- cut into one-inch pieces

1 green bell pepper -- cut into one-inch pieces

8 ounces extra-firm tofu -- cubed

2 tablespoons olive oil

1 tablespoon cider vinegar

1/8 teaspoon freshly-ground black pepper

1/2 teaspoon salt

1 1/2 teaspoons dried sage

1 1/2 teaspoons dried marjoram

1 1/2 teaspoons dried thyme

 

 

 

In a large skillet, toss all ingredients together. Cover and simmer for 45

minutes or until tender, stirring occasionally. (Serves 4)
