Guest guest Posted September 26, 2001 Report Share Posted September 26, 2001 * Exported from MasterCook * Two Mushroom Tofu Stir Fry Recipe By :Meatless Diabetic Cookbook by Barbara Grunes Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon olive oil olive oil spray 3 garlic cloves -- minced 1/4 teaspoon grated ginger root -- or more to taste 1 cup sliced leeks (white part only) 2 cups sliced white mushrooms 2 cups sliced brown mushrooms 1/2 cup grated carrots 2 cups bean sprouts -- washed and drained 3/4 teaspoon dried crushed rosemary 1/2 teaspoon salt 1/4 teaspoon black pepper 4 ounces extra firm lowfat tofu -- drained and cubed 3 cups cooked brown rice (optional) -- to serve Heat olive oil in a sprayed wok or nonstick frying pan over medium high heat. Stir fry garlic, ginger and leeks for about 2 minutes. Add mushrooms and carrots and stir fry until mushrooms are tender. Stir in bean sprouts. Season with rosemary, salt and pepper. Add tofu and heat. Adjust salt and pepper. Serve immediately over hot brown rice or couscous.
