Guest guest Posted September 24, 2001 Report Share Posted September 24, 2001 * Exported from MasterCook * Caesar Salad with Creamy Garlic Caesar Dressing Recipe By :McLeod Health Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 head romaine lettuce -- torn into bite size pieces 10 Ounces artichoke hearts (weight after draining) -- quartered 15 ounces hearts of palm (or 1 can) -- sliced 1 1/2 cups cherry tomatoes -- halved 1 cup fat-free croutons CREAMY GARLIC CAESAR DRESSING: 1 cup fat-free sour cream 1 1/2 teaspoon dijon mustard 1/2 teaspoon grated lemon rind 1/8 teaspoon cayenne pepper 2 tablespoons minced parsley 2 teaspoons garlic powder 3 tablespoons skim milk 2 tablespoons fat-free parmesan cheese Dressing: Make around 24 hours before serving. Combine ingredients in a jar with lid. Shake until smooth. Cover and chill overnight. Shake before using. Mix lettuce, artichoke hearts, hearts of palm, cherry tomatoes, and croutons in a large bowl. Toss with Creamy Garlic Caesar Dressing and serve. serving size of dressing: 1/8 cup TIP - rinse canned artichoke hearts and hearts of palm well in cold tap water.
