Maple Yogurt Sprinkles

1 cup rice-size textured soy protein (TSP) bits

1/3 cup apple juice

1/2 cup pure maple syrup

 

Preheat the oven to 350F. Cover an air-cushioned baking sheet with aluminum

foil and coat with nonstick cooking spray. If you don't have an air-cushhioned

sheet, use two baking sheets, set on top of each other.

 

Shake the textured soy protein in a sieve over the sink to get rid of any fine

dust. Place the bits in a bowl and pour the apple juice over them. Mix with a

fork until the textured soy protein is moiistened. Let the mixture sit until

the largest bits have no hard spots in the center when squeezed between your

fingers, about 10 minutes. Mix in the maple syrup wuntil the soy bits are

completely and evenly coated.

 

Spread out the coated TSP in an even layer about 12 x 6 inches, using a rubber

spatula, keeping the edges as thick as the center of the mass.

 

Bake the TSP for 5 minutes. Remove the pan from the oven. Stir, then respread

the layer, taking care not to let it get too thin at the edges or it will burn.

Repeat this procedure of baking and stirring twice more, uuntil the TSP is the

color of dried apricots, and the pieces are chewy but not hard, about 15 minutes

in all.

 

Stir the maple sprinkles once more, and spread them out to cover the whole pan.

Set the pan on a rack to cool. The sprnkles will become crisper as they cool.

These will keep for 2 to 3 weeks, stored in an airtight container. They may

become more chewy over time.
