Pinto Bean Quesadillas

Amount Measure Ingredient -- Preparation Method

1 can pinto beans, canned -- rinsed and drained

2 jalapeno pepper -- seeded, deveined, minced

1 tablespoon cider vinegar

4 flour tortillas -- 6 "

1/4 cup cheddar cheese, lowfat -- shredded

1 tomato -- thinly sliced

2 cloves garlic -- minced

1/2 teaspoon ground black pepper

 

In blender or food processor puree beans, jalapeno and vinegar

 

Spread mixture over tortillas. Sprinkle with cheese. Arrange tomato slices

over one side of each tortilla. Sprinkle with garlic and pepper. Fold the

tortillas in half, pressing flat.

 

In a small nonstick skillet, heat the tortillas one at a time, pressing down

with a spatula, until golden, about 2 minutes on each side. Cut into

triangles.

Hey all-

 

I have this cookbook- and it really isn't bad at all - and I actually made

these last week- pretty good & definately easy :)
