Guest guest Posted September 23, 2001 Report Share Posted September 23, 2001 * Exported from MasterCook * Veggie Paella Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Main Dish Vegetarian Vegetarian Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 cups vegetable broth 2 pinches saffron threads 1 tablespoon olive oil 1 1/2 cups short-grain rice 3 cloves garlic -- minced 1 cup diced tomatoes 1 cup canned cannelini beans -- drained, rinsed 6 large black olives -- pitted and sliced 2 tablespoons capers -- drained, rinsed 2 teaspoons thyme -- minced 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1 red bell pepper -- seeded and cut into 1 " squares 1 green bell pepper -- seeded and cut in 1 " squares Preheat oven to 350 degrees. In a small saucepan bring broth to boil. Remove from heat. Add saffron. Let sit 10 minutes In large skillet heat the oil. Add onion and cook, stirring as needed, until softened. Add the rice and garlic. Cook another 1 minute. Stir in broth and tomatoes. Bring to a boil and cook about 1 minute. Remove from the heat and stir in beans, olives, capers, thyme, salt and pepper. Transfer to baking dish. Scatter the bell peppers on top. Bake until the rice is just tender, 15-17 minutes. Cover and let stand 10 minutes before serving.
