Lentil Burgers

1/2 cup lentils -- picked over, rinsed, drained

2 teaspoons olive oil

1 onion -- diced

2 carrots -- diced

1 teaspoon salt

1/2 teaspoon thyme -- minced

1/2 teaspoon ground black pepper

1/4 cup bread crumbs

2 tablespoons bread crumbs

4 whole wheat hamburger buns

 

Cook lentils according to package directions

 

In a medium skillet, heat the oil. Add carrots and onion. Cook, stirring as

needed until golden, about 10-12 minutes

 

Spray broiler rack with cooking spray. Set aside. Preheat broiler

 

Add lentils, salt, thyme and pepper and 1 cup water to the vegetables. Cook

covered, stirring as needed, until the liquid is absorbed, about 20 minutes

 

Stir in bread crumbs.

 

Form into 4 burgers. Broil until golden 7-8 minutes on each side. Serve on

buns
