Mushroom Pizza With Tomato And Smoked Cheese

1/4 recipe Pizza Dough

(see separate recipe)

2 tablespoons olive oil

6 ounces mushrooms -- thinly sliced

Salt and freshly milled pepper

1/2 cup Tomato Sauce for Pizza

(see separate recipe)

1 tomato -- seeded and diced

2 ounces coarsely grated smoked mozzarella -- up to 3 ounces

OR provolone

2 tablespoons freshly grated Parmesan

2 tablespoons parsley -- chopped with

1 garlic clove

Red pepper flakes

 

MAKES ONE 10-INCH PIZZA

 

I like to use big fleshy mushrooms, like portobello or, with luck, porcini.

 

Preheat the oven to 500F.

 

Roll the dough into a 10-inch circle, set on a floured peel or pizza pan,

and let rest for 10 minutes. Heat the oil in a wide skillet over high

heat. Sauté the mushrooms until browned, about 5 minutes. Season well

with salt and pepper.

 

Spread the tomato sauce over the dough. Add the diced tomato, then the

mushrooms. Bake for 5 minutes, add the cheeses, and bake for 3 minutes

more. Remove and scatter the parsley-garlic mixture and pepper flakes over

the top.
