if you have corn left ..... can be grilled or roasted in oven

Cilantro Squash Dumplings

Amount Measure Ingredient -- Preparation Method

1 yellow squash -- grilled and diced

2 bunches cilantro -- chopped

1 cup grated cheese -- optional

1 tablespoon olive oil

2 limes -- juice and zest

salt and pepper

16 won-ton wrappers

1 egg -- beaten

 

Combine the grilled squash, cilantro, cheese, olive oil, lime juice and zest.

Season with salt and pepper.

 

Place a small dollop of this mixture in the center of each wonton skin. Brush

edges with egg and fold into triangle. Press down firmly to seal. Repeat.

 

Steam for 6 to 7 minutes until tender.

Smoked Corn and Grilled Sweet Potato Chowder (Zimmer)

5 corn on the cob

1 red onion -- diced

5 roma tomatoes -- cored and diced

1 poblano pepper -- diced

1 sweet potato -- sliced

1 tablespoon olive oil

FOR THE SOUP:

1/4 cup cooked wild rice

4 cups vegetable broth

2 large garlic cloves -- crushed

1/2 tablespoon fresh thyme leaves

1 chipotle peppers -- minced

1 large lime -- juiced

salt and pepper

cilantro -- garnish

1/2 recipe Cilantro Squash Dumplings (Zimmer) optional

 

Toss corn, onion, tomato, poblano, and sweet potato (or yam) with olive oil.

 

Set up grill with wet smoking chips. Arrange vegetables on grill and cover for

15 to 20 minutes. Make sure the grill is not too hot.

 

Cut corn off cob and dice sweet potato slices. Combine smoked vegetables with

the other ingredients in a soup pot, and bring to a simmer. Cook for 10 to 15

minutes or until it tastes good. Season with thyme, salt and pepper.

 

OVEN TIP - If you want to roast instead of grill the vegetables, use a heavy

duty foil, make a packet, adding the chipotle for smoky flavor: roast at 425F

degrees for 15 minutes. Remove from oven and let stand for minutes before

opening the packet.

NOTES : REVIEW WITH CHANGES: Use a pan designed for the grill with holes up the

sides but solid bottom. Line it to cover the holes about 2 inches up the sides

to prevent corn from falling out. We use 10 ounces corn kernels; air dried. Toss

corn with onions etc. and place in the lined pan. We used one burner and put the

pan on the opposite burner. Smoked with hickory chips. Picked up the recipe in

step three. Served with sour dough rolls. Garnish with cilantro. Interesting

flavors. Next time, omit chipotle.
