Guest guest Posted September 21, 2001 Report Share Posted September 21, 2001 * Exported from MasterCook * Spicy Tofu Marinade Recipe By :Dana Jacobi Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup soy sauce 1/4 cup olive oil 1 tablespoon dry sherry 1 tablespoon honey 2 teaspoons dry mustard 1 teaspoon onion powder 1 teaspoon red pepper flakes 1 teaspoon ground cumin 1 teaspoon ground coriander 1 tablespoon freshly ground black pepper 1 teaspoon Szechuan peppercorns (not toasted) 4 garlic cloves -- crushed 16 ounces firm or extra-firm tofu -- pressed Mix all the ingredients except the tofu with 1 cup water. Place the tofu in a 1-quart size, freezer-weight plastic bag along with the marinade. Marinate in the refrigerator overnight, or for 3 hours at room temperature. Chef Sandy Sonnenfelt of The Pasta Shop in Oakland, California, uses it for making smoked and baked sliced tofu. I also like it for marinating tempeh, then smoking it.
