Easy Nut Burgers

Amount Measure Ingredient -- Preparation Method

1 onion -- chopped

1 small celery stalk -- chopped

2 tablespoons unsalted butter

1/2 teaspoon dried mixed herbs

1 1/2 teaspoons flour

5 tablespoons water -- plus more as needed

1/2 teaspoon vegetarian bouillon powder

1 1/2 teaspoons soy sauce

1/2 teaspoon yeast extract (Marmite)

or Vegemite or brewers yeast

1 cup mixed nuts (see tip) -- finely chopped

or ground in food processor

6 tablespoons soft whole-wheat bread crumbs -- heaping measure

salt and pepper

TO FINISH:

dry bread crumbs

oil for shallow frying

 

1. Fry onion and celery in butter for 10 minutes, browning them lightly. Add

herbs, stir for a minute then mix in the flour and cook for 1 to 2 minutes.

 

2. Pour in water and stir until thickened. Add bouillon powder, soy sauce, yeast

extract, nuts, soft breadcrumbs and a pinch of salt and pepper (or to taste).

 

3. Cool, then form into 4 flat burgers about 1/2-inch thick and coat with dried

breadcrumbs. Pour a little oil in a frying pan, just enough to cover the base

thinly, heat, then put in the burgers and fry them until crisp. Turn them over

and fry second side, then drain on paper towels. Serve on buns if desired.

NOTES : These make a good supper dish, served in a soft " bap " or roll with

sliced tomato and onion. The European Bap is about 5-inch in diameter. It's not

the wonder-bread hamburger bun; similar to a fresh bakery bun that comes with

sesame or poppy seeds or are plain. The quantities can easily be multiplied up

to serve more people, or halved for one person.
