White Beans with Tomatoes and Chipotle Chilies

1 cup dried small white beans

1 pound fresh tomatoes (or two medium)

1 tablespoon canola oil

1 medium white onion -- diced

4 garlic cloves -- minced

1 tablespoon chipotle chile canned in adobo -- minced

1/2 teaspoon salt

 

1. Rinse and sort beans and place them in a stockpot. Cover with hot water and

soak for about 2 hours. Drain off the soaking water and add fresh water to

cover. Bring to a boil over high heat, reduce the heat to medium and cook 45

minutes to 1 hour, until the beans are tender. Add more water, if necessary,

during the cooking time to keep the beans barely covered.

 

2. Meanwhile, bring a few cups of water to a boil in a small saucepan, and fill

a large bowl or basin with ice water. Blanch the tomatoes for 2 to 3 minutes.

Remove and discard the stem ends and cut the tomatoes in half crosswise. Gently

squeeze over the sink to remove the juicy seed pockets then dice the tomatoes

and place them in a bowl. (Editor's note: it does not say to " peel " .)

 

3. Heat the oil over medium heat in a heavy bottomed skillet and add the onion

and garlic. Saute for 2 to 3 minutes until the onion begins to soften. Stir in

the tomatoes, chili and salt. Increase the heat to medium high and continue to

cook for about 5 minutes, stirring occasionally, until the sauce has reduced

somewhat. If you are still waiting for the beans to cook, turn off the heat,

cover the pan and set aside.

 

4. When the beans are tender and their liquid has reduced to a thick sauce

consistency, stir in the tomato sauce. Serve hot.

 

TIP: Chipotle chilies in adobo come in a can.

NOTES : White beans have a moist texture and distinctive smoky, slightly spicy

flavor. Combine on a menu with enchiladas or tacos, or eat them as is with corn

tortillas on the side.
