Cold Noodle Salad with Peanut Sauce

12 ounces linguine

2 tablespoons dark sesame oil

1/2 cup peanut butter

1 garlic clove -- pressed

1/3 cup tamari soy sauce

1/4 cup water

1 teaspoon hot chili paste -- or to taste

1 8 oz can sliced waterchestnuts

1 red bell pepper -- cut into thin strips

1 cucumber -- peeled, halved lenghthwise, and thinly

sliced

1/4 cup minced scallions

 

Cook the linguine in a large pot of salted boiling water, stirring occasionally,

until it is al dente, about 8 to 10 minutes. When the pasta is cooked, drain

it, rinse with cold water, and place in a large serving bowl. Add 1 tablespoon

of the sesame oil, toss to combine, cover, and refrigerate. Combine the peanut

butter, garlic, remaining 1 tablespoon sesame oil, tamari, water, and chili

paste in a small bowl. Add the water chestnuts, bell pepper, cucumber,

scallions, and peanut sauce to the linguine. Toss gently to combine, and serve.
