Leek Croquettes

6 large leeks

white and palest green parts only

chopped and well rinsed

3 eggs -- beaten

3/4 cup matzo meal

1/2 lemon -- juice of

1 tablespoon minced fresh dill -- up to 2

salt and freshly ground pepper -- to taste

oil for sautéing

(about 2 tablespoons)

 

Makes about 2 dozen

 

Alongside the couscous, these are a delicately flavored accompaniment. If

you'd like to keep this meal egg-free, simply prepare and " sweat " the leeks

as suggested, then toss them with a bit of margarine, lemon juice to taste,

fresh dill, and salt and pepper, rather than making them into croquettes.

 

Place the leeks in a large skillet with 2 tablespoons of water. Cover and

" sweat " them over moderate heat, stirring occasionally and adding a few

drops of water if the skillet gets dry, until they are limp. Combine the

leeks in a mixing bowl with the remaining ingredients except the oil, and

mix well. Heat just enough oil to coat the bottom of a large nonstick

skillet. When very hot, drop enough of the mixture onto the skillet to

form 3-inch croquettes. Cook on both sides over moderately high heat until

golden brown. Drain briefly on paper towels, then place in a covered

container to keep warm until all are done.
