Guest guest Posted September 20, 2001 Report Share Posted September 20, 2001 * Exported from MasterCook * Pizza With Tomato, Mozzarella, And Olives Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 508 Serving Size : 1 Preparation Time :0:00 Categories : Pizza Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 recipe Pizza Dough 3/4 cup Tomato Sauce for Pizza (see separate recipes) 3 ounces mozzarella -- up to 4 diced into small cubes 12 Gaeta or Nicoise or Kalamata olives pitted and quartered 1 tablespoon chopped marjoram Freshly milled pepper Extra virgin olive oil MAKES ONE 10-INCH PIZZA The success of a simple pizza, like this one, depends on the quality of your oil and herbs - which should be fruity and fragrant, respectively. Preheat the oven to 500 F. Roll or stretch out the dough into a 10-inch circle, place it on a floured peel or pizza pan, and let rest for 10 minutes. Spread on the tomato sauce, leaving a 1/2-inch border around the edge. Scatter the cheese and olives over the sauce, then add half the marjoram and a little pepper. Drizzle a little oil over all.
