Fresh Tomato Sauce in the Crockpot

I made this today and it came out terrific. I made it to freeze but you

could eat it right away on pasta.

Tomato Garlic Sauce

Adapted from 1000 Low Fat Recipes

|

2 cups tomatoes, chopped

3 cloves garlic, thinly sliced

3 tbsp tomato paste

salt

pepper

Place tomatoes, garlic, tomato paste, salt and pepper in pot over medium

heat*. Cook until tomatoes break down.

 

Risa's notes: I puree this with a hand blender.

 

* I put this in the crockpot on HIGH for 2 hours and it tastes just like you

simmered it for 1/2 hour on the stovetop and no stirring or any work at all.
