Lentils with Tomatoes and Thyme

Amount Measure Ingredient -- Preparation Method

1 cup green or puy lentils

2 tablespoons butter

2 large onions -- thinly sliced

1 garlic clove -- crushed

2 teaspoons dried thyme -- (2-3)

2 cups peeled and chopped tomatoes -- (2.5-cups)

2 tablespoons chopped fresh parsley -- (2-3)

salt and black pepper

 

Put lentils into large saucepan, cover generously with water and boil gently

until tender - 45 to 60 minutes. Drain well.

 

Melt butter in large saucepan and fry the onions until tender. Add garlic,

thyme, tomatoes, drained lentils and parsley. Season with salt and pepper.

Reheat gently and serve.

NOTES : Simple dish is nicest when made with fresh tomatoes. Serve with crusty

bread or rolls. If there's leftover, try it cold as a salad. Rescale the

ingredients equally for fewer or more servings; (halved, quartered, doubled,

etc.)
