Guest guest Posted September 19, 2001 Report Share Posted September 19, 2001 * Exported from MasterCook * Lentils with Tomatoes and Thyme Recipe By :Cheap and Easy by Rose Elliot Serving Size : 0 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup green or puy lentils 2 tablespoons butter 2 large onions -- thinly sliced 1 garlic clove -- crushed 2 teaspoons dried thyme -- (2-3) 2 cups peeled and chopped tomatoes -- (2.5-cups) 2 tablespoons chopped fresh parsley -- (2-3) salt and black pepper Put lentils into large saucepan, cover generously with water and boil gently until tender - 45 to 60 minutes. Drain well. Melt butter in large saucepan and fry the onions until tender. Add garlic, thyme, tomatoes, drained lentils and parsley. Season with salt and pepper.
