Dried Fruit Soup

1 cup dried apples

1/2 cup dried apricots

1/2 cup pined prunes

2 tablespoons raisins

1/4 cup dry red wine

1 cinnamon stick

6 whole cloves

1 cup apple juice

plus more as needed

1/2 lemon -- Juice of

reduced-fat sour cream or low-fat yogurt

or buttermilk -- optional

fresh mint leaves

 

6 to 8 servings

 

Dried fruits are a favored festive ingredient in Sephardic

tradition. Here, several varieties are combined in an unusual and

refreshing cold soup.

 

In a deep, heavy saucepan, combine the dried fruits, wine, spices, and just

enough water to cover. Bring to a boil, then remove from the heat. Add

the apple juice and lemon juice. Let the soup cool. Once cooled, add

additional apple juice if the fruits have gotten too crowded, but let the

soup stay fairly dense. Chill thoroughly before serving. Serve in small

portions, garnishing each serving with a dollop of sour cream or yogurt or

a swirl of buttermilk, if desired, and a mint leaf or 2.
