Honey Cake

4 cups whole wheat pastry flour

3 tablespoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

3 eggs -- beaten

1 cup honey

2 cups applesauce

2 teaspoons vanilla extract

1/2 cup golden raisins

2/3 cup chopped almonds

 

Makes 2 loaves

 

In Jewish tradition, honey cake is served at many happy occasions but is a

must for the Ashkenazic Rash Hashanah.

 

Preheat the oven to 325 degrees.

 

Combine the first 7 ingredients in a mixing bowl. In another bowl, combine

the eggs, honey, applesauce, and vanilla. Heat together until

smooth. Make a well in the center of the dry ingredients and pour in the

wet mixture. Beat together until thoroughly combined. Stir in the raisins

and almonds. Divide the batter between 2 lightly oiled loaf pans. Bake 50

to 60 minutes, or until a knife inserted in the center of a loaf tests clean.
