Creating a meatless menu from early fall harvest goods, incorporated into

classic dishes of Eastern European, or Ashkenazic, Jews, is not a daunting

task. The sweetness in the dishes must be treated subtly, so as not to be

overwhelming.

 

Make-ahead suggestions for:

 

A day ahead:

 

Bake the Challah.

 

Make the Beet Borscht- especially since it needs time to cool and chill.

 

Bake the Honey Cake.
