Pie Crust With Bran

1 1/4 cups flour

1/4 cup wheat bran

1/4 teaspoon salt

1/4 pound butter

cut into small pieces

OR a mixture of butter and shortening

3 tablespoons ice water -- as needed, up to 5

 

MAKES ONE 9-INCH PIE SHELL OR 10-INCH TART SHELL

 

The nutty flavor of bran is always particularly good with custard or

ricotta fillings, whether sweet or savory.

 

Combine the flour, bran, and salt in a bowl, using your fingers or two

knives, then cut in the butter, until the mixture resembles coarse

meal. Lightly work in enough water for the dough to cohere when brought

together with the hands. Gently flatten the dough into a disk. Slip it

into a plastic bag and let rest for 15 minutes in the refrigerator if the

dough feels too soft or overworked; otherwise, immediately roll it out into

a circle 1/8 inch thick.
