Add the peas and pecans to the food processir and pulse until the mixture has the texture of chopped liver. It should be dense, but spreadable. Season to taste with salt and pepper. Serve immediately, or, if chilled, let sit for 20 minutes at room temperature before serving. (The vegetarian chopped liver will keep for up to 3 days, tightly covered and refrigerated. NOTES : Serving chopped liver is a tradition among Jews of Eastern European descent, particularly as part of the weekly Sabbath dinner and on holidays. This meatless version pleases everyone, though, including people who do not care for liver. My mother's version uses canned baby peas in place of the green beans most recipes call for. When I gave her some endamame, she used them instead. Now, she skips the peas entirely, while I prefer combining them with some endamame. Spread this vegetarian chopped liver on crackers or scoop it onto individual salad plates, surrounded by green bell pepper rings and accompanied by matzohs or your favorite crackers. Nutr.
