Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cup frozen shelled endamame

1 tablespoon canola oil

1 1/2 cups chopped onions

1 teaspoon salt

1/2 cup drained canned sweet baby peas

1/4 cup chopped pecans

salt and freshly ground black pepper

Add the edamame to a pot of boiling salted water and cook until they are very

tender, about 8 minutes. Drain the beans and place them in the bowl of a food

processor.

Heat the oil in a skillet over medium-high heat. Add the onions, stirring to

coat them with the oil. Sprinkle on the salt and saute the onions until they

are browned, about 8 minutes. Transfer the onions to the food processor.

Add the peas and pecans to the food processir and pulse until the mixture has

the texture of chopped liver. It should be dense, but spreadable. Season to

taste with salt and pepper.

Serve immediately, or, if chilled, let sit for 20 minutes at room temperature

before serving. (The vegetarian chopped liver will keep for up to 3 days,

tightly covered and refrigerated.

NOTES : Serving chopped liver is a tradition among Jews of Eastern European

descent, particularly as part of the weekly Sabbath dinner and on holidays.

This meatless version pleases everyone, though, including people who do not care

for liver. My mother's version uses canned baby peas in place of the green

beans most recipes call for. When I gave her some endamame, she used them

instead. Now, she skips the peas entirely, while I prefer combining them with

some endamame. Spread this vegetarian chopped liver on crackers or scoop it

onto individual salad plates, surrounded by green bell pepper rings and

accompanied by matzohs or your favorite crackers.
