Guest guest Posted September 14, 2001 Report Share Posted September 14, 2001 * Exported from MasterCook * Garlicky Black Beans Recipe By : The Vegetarian 5-Ingredient Gourmet, Nava Atlas, page 13 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon extra-virgin olive oil 4 garlic cloves -- minced 32 ounces canned black beans -- drained and rinsed OR 4 cups cooked black beans (from about 1 2/3 cups raw) 1/2 lemon -- up to 1 or to taste Juice of 1/4 cup minced fresh cilantro or parsley 6 servings Black beans are delicious with lots of garlic. This is one of my favorite ways to serve them. 1. Heat the oil in a large saucepan. Add the garlic and saute over low heat until golden, or 2 minutes. 2. Add the beans, 1/2 cup water, and the lemon juice. Cook over medium heat until the mixture comes to a gentle simmer. 3. Remove about 3/4 cup of the beans, mash them, and return to the saucepan. Simmer very gently for another 5 minutes. Stir in the cilantro, and serve.
