Seitan Kebobs

2 medium red bell peppers -- cut into 1 " dice

2 medium zucchini -- halved lengthwise & cut into 1/2 " thick

chunks

1 pound seitan -- cut into 3/4 " chunks

1/2 cup natural low fat barbecue sauce -- (to 2/3 cup)

 

Preheat the broiler or grill.

 

Using 8 to 10-inch metal skewers, alternate the bell peppers, zucchini, and

seitan, in that order, until all the ingredients are used. There should be

enough for 8 skewers.

 

Brush the barbecue sauce over the kebobs, then place on a foil-lined baking

sheet for the broiler or on a piece of foil for the grill. Broil or grill,

turning every 3 to 5 minutes (use an oven mitt!) until done to your liking.

 

Allow 2 skewers per serving.
