Guest guest Posted September 13, 2001 Report Share Posted September 13, 2001 * Exported from MasterCook * Sweet Potato Apple Bake Recipe By :Roberta Kalechofsky and Rosa Rasiel Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 medium sweet potatoes 1 1/2 thinly sliced Cortland apples -- use up to 2 cups lemon juice -- optional 1/2 cup brown sugar 3 tablespoons margarine cinnamon Cook potatoes in boiling water to cover, 30 - 45 minutes until soft. Drain, cool, and peel. Cut into 1/2 inch thick slices. Meanwhile, cook apple slices in water barely to cover until almost tender. Drain and save the cooking water. Preheat oven to 350 degrees. In greased baking dish, make alternate layers of potatoes and apples, sprinkle with brown sugar, lemon juice if using, and a dash of cinnamon. Dot with margarine. Pour 1/2 cup of the reserved apple water over them.
