Spinach Tofu Balls [Egg And Dairy Free]

Amount Measure Ingredient -- Preparation Method

10 ounces frozen chopped spinach -- thawed and drained

1 cup tofu -- crumbled

1/4 cup gluten flour (vital gluten; " do-pep " )

1/2 cup soft breadcrumbs

4 cloves garlic -- minced

1/2 teaspoon onion powder

 

Combine the gluten flour with the breadcrumbs. Next, add the garlic and onion

powder. Mix well. Now add in the spinach followed by the tofu. If the mixture is

hard to work with, add a few tablespoons of water. Spoon teaspoon-sized balls

onto a nonstick cookie sheet. Bake for 35 minutes at 350 degrees.
