Tahini Rotini with Broccoli and Lemon

2 large garlic cloves -- chopped

1 cup cooked chickpeas -- rinsed and drained

1/4 cup tahini

juice and zest of one lemon

2 tablespoons tamari soy sauce

1/8 teaspoon cayenne pepper

1 cup hot vegetable stock or water

1 pound rotini

2 cups broccoli florets

2 tablespoons chopped fresh flat-leaf parsley

2 tablespoons sesame seeds -- toasted

 

In a food processor, combine the garlic, chickpeas, tahini, lemon juice, tamari,

and cayenne and process until smooth. Transfer the mixture to a saucepan and

stir in the vegetable stock or water. Keep warm over low heat. Cook the rotini

in a large pot of salted boiling water, stirring occasionally, until it is al

dente, about 8 to 10 minutes. During the last 5 minutes of cooking time, add

the broccoli to the pasta. When the pasta is cooked, drain the pasta and

broccoli and place in a shallow serving bowl. Add the sauce and toss gently.

Sprinkle with the lemon zest, parsley, and sesame seeds, and serve immediately.

NOTES : Tahini, or sesame paste, ia loaded with protein and calcium, vitamin C,

and other nutrients. It's hard to believe a dish that's so good for you could

taste this rich and creamy. Typically used in Mediterranean cuisine, tahini is

available in well-stocked supermarkets, natural foods stores, and at specialty

grocers.
